Dehydration may play a role, but with a DXA scan I'm not sure how much. You are probably good to drink some water before to quench your thirst, just don't chug a gallon of water lol

The amount of carbohydrates is irrelevant. You will be a "sugar-burner" when using niacin even if you eat no carbohydrates. That said, how is 100g carb-heavy? I usually eat 150-200g per meal easily.
