Default Veggie Sauce - Feels like cheating

Hi guys.

On week 2 and already sick of the dry chicken. I usually BBQ a bunch of chicken on Sunday for the week, now that I'm on the diet I can't indulge and the layers of bbq sauce I use to use.

Thought I'd share a great cooking tip and check that it's not cheating.

This week I thought of making my own Veggie Sauce and I have to say that it is delicious, makes the chicken super juicy and makes me feel more full.

It really feels like cheating because my meals feel like a full meal now and my co-workers think it's some fancy dish I have for lunch.

The Veggie Sauce consists of low-GI veggies:
  • 1 Large Diced Onions
  • 1/2 Blub Diced Garlic
  • 4 Diced Green Peppers
  • 5 medium Cubed Tomatoes
  • 1 Cup of water
  • 1 tbs of oil

I mix it all in a pot and let it boil together for about 25 minutes and Bam - you got yourself a sauce.

Pretty sure we don't even count the calories in this cause it's primary low-gi veggies full of fiber.

Enjoy and thanks.

Hmm -good idea.

As long as i keep the oil to a minimum, gonna fry up a TON of onions. Fried onions are good with anything!.

Just drop the ingredients into any food calculator and you can easily track your cals/macros. 1 medium onion will set you back about 10 carbs, a medium bell pepper is another 6, and a medium tomato is another 5. With your recipe you're looking at about 60 carbs.
