Default Substituting carbs with vegetables

Shred up cauliflower (raw) in a food processer (or use a cheese grater). Serve as a rice substitute.

Roast finely sliced zucchini (courgette) as pasta substitute (has been mentioned on other posts)

Shave a carrot into ribbons and simmer until tender. Orange spaghetti.

I thought the cauliflower rice was original!

Default Cauliflower Mashed Potatoes

Steamed cauliflower also makes great "mashed potatoes". Steam it until mushy then blend in a food processor with some half&half, salt, pepper and butter (or 'I can't believe its not butter' spray if you keep fats low)

That sounds great too! I ate out today and had the most delicious cajun spiced sea bream on parsnip mash. The mash was yum! I just looked it up - pretty much same cals as white potato, but double the fiber. Anyway, it's good to have options!
