Arrow Low Carb Pumpkin Bread with coconut flour


Used only 1/2 stick of butter.

Used 12 packets of Truvia for the sweetener

Still used the Cellucor Molten Chocolate protein powder, because that's what I have

Used 1t cinnamon and added 1/4t nutmeg and 1/4t ground cloves
Used 7oz pumpkin in place of the zucchini, so I also left out the salt intended to draw moisture from the zucchini

Still in a 9x5 glass loaf pan, 1 hour at 325. Very dense and moist, mild pumpkin flavor, strong clove flavor (which I like, but some might not.. 1/8 ground cloves could work, or leave it out entirely).
Macros based on the ingredients I used: 13 slices, 87 calories per slice, 6 fat, 4 protein, 3 net carbs.

Next time, I think I will play with the quantity of pumpkin and or sub something in for some of the coconut flour to bring this number down. There are approx. ~13 net in the pumpkin and ~14net in the coconut flour.
