Dinner I'm obsessed with right now:

RFL Spaghetti

-4oz. 96% lean ground beef
-Onion, 1 garlic clove, mushrooms, Italian spices, 1/2 tomato
-1 serving shirataki noodles
-[1T. Parmesan cheese]

Brown up the beef with lots of salt, however much onion you like, garlic, mushrooms, and spices (this is a ready-made spice blend). I add the tomato last at the very end because I don't like 'em soggy. Served on some shirataki noodles this is a nice hearty meal! Parmesan cheese makes it extra-tasty if you can afford the fat (or find fat-free parmesan...which I can't).

Are shirataki noodles permissible on RFL? They're only 2g carbs per serving and very filling, so I'm going with it...

No Noodle Lasagna

This is so good. I have a tiny loaf pan that I use to make a single serving at a time, but this could definitely be made in a bigger pan, and divided into portions. Low fat ricotta would probably be even better if you can get it.

100 g chicken breast mince
1 large egg white
100 g (~3/4 cup) low fat cottage cheese
60 g (1/2 small) zucchini, sliced thin vertically
40 g mushrooms
55 g (1 small) bell pepper, in thin strips
30 g (1/4 small) onion, diced
40 g (1 small) eggplant, peeled & sliced thin vertically
60 g (~1/2 cup) canned diced tomatoes
2 g (1/2 tbsp) nutritional yeast
salt, black pepper, red pepper flakes, garlic powder, basil, oregano, sage

1. Cook chicken breast with onion & garlic in saute pan.I need to read the rules post. Add salt, red pepper flakes, & sage. Set aside.
2. Mix cottage cheese, egg white, nutritional yeast, salt, black pepper, basil. Set aside.
3. Mix diced tomatoes, salt, garlic, oregano.
4. Layer in little loaf pan, from bottom to top: zucchini, chicken mix, eggplant, cheese mix, bell pepper, mushrooms, tomato sauce.
5. Cover with foil & bake for 30-40 minutes @ 190 deg C.

Chicken nutbutter Salad

110gms chicken
85 gms spinach/spring lettuce
19 gms macadamia nutbutter (Maranathas is good) = 1tbsp + ~2gms
100 gms broccoli
salt & garlic powder if want
apple cider vinegar
this is a delicious dish.it's my favourite... Elizabeth the Golden Age dvd set

You can put it on a rack in the oven on the lowest temperature possible.
I suppose if it is a convection oven that works at that temperature it's even better.

Pumpkin Bread IV
You might as well bake pumpkin bread in the large batch called for here, because everyone loves it. Three full-sized loaves, lively with cinnamon, cloves and nutmeg, are your reward. Wrap loaves in cellophane, tie with a colorful ribbon, and give as a gift!

Deep Fried Chicken Fingers
(clone of Popeye's Naked Strips)

1 lb. chicken breast, sliced into strips
1 Tbsp (15g) Corn Starch
1 Tsp (5g) All-Purpose Flour
dash of baking powder
1.5 Tsp (8g) salt
1 Tsp (5g) black pepper
2 Tsp (10g) cajun seasoning (or onion powder, depending on taste)
1/4c water

Mix batter ingredients in medium bowl, then drop in the chicken. Stir with hand so that all strips are evenly coated. Wait about 5-10 minutes for chicken to absorb the water, pulling the batter tightly into its pores. Deep Fry at 375 until golden brown, remove and let sit for 3 minutes to allow internal moisture to "uncrisp" the batter coating, then fry again for 1 minute to vaporize said moisture. Sauce optional but not needed if batter is suitably spiced. Oh yeah, chicken fingers as diet food!

Calories: ~700
Protein: 105g
Carbs: 20g
Fat: ~20g

It is getting pretty hot over here (37C on Sat!), and I am enjoying a drink that I made up.
I love frappucinos and this totally destroys my cravings.
You will need a powerful blender.

Casein Frappucino
6 ice cubes
1 scoop casein (preferably chocolate)
1/3 cup water

1) Blend ice cubes
2) Add casein and water (I also add glutamine here)
3) Blend until all ingredients are evenly mixed together

This one is coffee-free, but espresso/coffee granules can be added.
Enjoy!

I'm gonna guess it wouldn't be as thick. The casein protein gets much thicker than whey, which I'm guessing gives it the pseudo Frap consistency.
