I like this recipe because it makes a decently big batch all at once (I'm lazy). I'll grab a picture tomorrow before I eat the rest of the pan.
- 2 cups chocolate protein powder (I used TrueNutrition chocolate peanut butter flavored pea protein powder)
- 1/2 cup PB2
- 1 cup cocoa powder
- 2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup egg whites
- 2 tsp vanilla
- 2 cups water
- Sweetener: I used 1/2 cup erithytol, 8 "scoops" stevia powder, 12 drops liquid sucralose. But other kinds and combos would probably work, too, if you have other preferences. Just start conservatively and add to taste.
Preheat oven to 350. Line 9x13 baking dish with parchment paper.
Mix dry ingredients well, then add wet ingredients. Stir until all the dry ingredients are mixed in (should be thick, like Play-doh).
Pour into pan and use another sheet of parchment paper or plastic wrap on top to press it down and flatten it out in the pan. (Discard this before baking.)
Bake for 30 minutes.
Total pan is 240g protein, 36g carbs, 18g fat. If you cut it into 12, each brownie will have 20g protein, 3g carbs, 1.5g fat.
Would be AMAZING with a couple tablespoons of Cool Whip Free on top
